ACTIVE PROTOCOL · 5 WHOLE CRIMSON STIGMAS

Why 70°C Unlocks 3× Deeper Aroma Than Boiling Water

House benchmark for unlocking 95%+ water-soluble Crocin while keeping volatile Safranal intact. Boiling water (100°C) flashes off delicate volatile Safranal (330 nm) within ninety seconds. Gentle 68°C–75°C liquid coaxes out full carotenoid gold while preserving Pampore’s signature wild-honey bouquet.

01 · Measure: Draw 5 whole crimson stigmas using dry fingers or brass tweezers, then re-seat the cork immediately.
02 · Steep: Submerge in 30–50 ml of 70°C Water or Milk inside a small glass or porcelain vessel.
03 · Fold In: Pour both the luminous golden liquor and whole crimson strands into your dish at the final moment.

Srinagar Samovar Shahi Kahwa

DOSAGE
6–8 whole crimson stigmas (3–4 per cup)
THERMAL WINDOW
75°C mountain spring or filtered water
STEEP TIME
10 to 12 minutes gentle infusion
INGREDIENTS
  • 6–8 whole ZAFORA Pampore Mongra stigmas (never powdered)
  • 360 ml filtered water heated to boil, then rested to 75°C
  • 2 lightly bruised green cardamom pods & 1 small quill of cinnamon
  • 1/2 tsp fine Kashmiri green kahwa leaf (optional traditional base)
  • 6 blanched Kashmiri badam (almonds), finely slivered, plus raw blossom honey to finish
HOUSE METHOD
  1. 01Simmer water gently with bruised green cardamom and cinnamon bark for 3 minutes, then remove from direct flame so temperature settles near 75°C.
  2. 02Place 6–8 whole ZAFORA saffron stigmas into a pre-warmed porcelain teapot or Samovar chamber and pour the spiced water over them.
  3. 03Cover immediately to trap volatile 330 nm Safranal honeyed aroma; steep undisturbed for 10–12 minutes until luminous Chinar gold.
  4. 04Pour over slivered blanched almonds in pre-warmed glass or porcelain cups—allowing two intact crimson threads to float in every serving.
CELLAR & SENSORY NOTENever boil saffron directly over a rolling 100°C flame: gentle 75°C steeping preserves the delicate floral-honeyed Safranal notes that distinguish Pampore GI Mongra.

8–10 whole crimson stigmas (4–5 per cup)
THERMAL WINDOW
70°C whole A2 milk or barista oat milk
STEEP TIME
15 minutes covered bloom
INGREDIENTS
  • 8–10 whole ZAFORA Kashmiri Mongra stigmas
  • 30 ml warm (70°C) milk in a small crystal or porcelain tasting vessel
  • 350 ml whole A2 milk (or unsweetened oat/almond milk)
  • 1 tbsp finely ground almonds & unsalted green pistachios
  • Pinch of freshly crushed green cardamom seeds & unrefined jaggery or raw honey
HOUSE METHOD
  1. 01Steep the whole saffron strands in 30 ml of 70°C milk inside a covered small bowl for a full 15 minutes—watching clear golden halos expand slowly from each crimson tip.
  2. 02Warm the remaining 350 ml milk gently with crushed almonds, pistachios, and cardamom without scorching.
  3. 03Fold the 15-minute golden saffron starter infusion (threads and all) into the warm milk off the heat.
  4. 04Rest 1 minute before serving warm in heavy ceramic or glass tumblers.
CELLAR & SENSORY NOTEMilk lipids bind aromatic Safranal while water-soluble Crocin (238 score) turns the entire vessel into a calm, velvety amber gold without artificial colouring.

Wazwan & Awadhi Dum Biryani Infusion

DOSAGE
12–14 whole crimson stigmas
THERMAL WINDOW
68°C–72°C warm milk & rosewater emulsion
STEEP TIME
20 minutes prior to sealing the handi
INGREDIENTS
  • 12–14 whole ZAFORA Kashmiri Mongra stigmas
  • 40 ml warm whole milk at 70°C
  • 1 tsp pure artisanal rosewater (gulab jal)
  • 400 g aged long-grain Himalayan basmati rice, parboiled to 75% doneness
  • 1 tbsp cultured ghee for the final crown drizzle
HOUSE METHOD
  1. 01Twenty minutes before assembling the biryani, immerse 12–14 intact saffron threads into 40 ml of 70°C milk; cover tightly.
  2. 02Once the milk turns deep burnished gold at the 20-minute mark, stir in 1 tsp rosewater.
  3. 03Layer the fragrant parboiled basmati in your heavy brass or copper handi, then drizzle the saffron infusion in a slow crescent across the top rice crown.
  4. 04Dot with warm ghee, seal the lid for slow dum steaming (18–20 minutes on low heat), and fluff gently before serving so ivory and saffron-gold grains alternate cleanly.
CELLAR & SENSORY NOTEBecause ZAFORA retains zero pale yellow floral stem filler, 12 pure Mongra stigmas tint and perfume an entire four-person handi effortlessly.

Risotto alla Milanese & Saffron Crème

DOSAGE
10 whole crimson stigmas
THERMAL WINDOW
70°C unsalted vegetable or bone stock
STEEP TIME
18 minutes covered stock infusion
INGREDIENTS
  • 10 whole ZAFORA Kashmiri Mongra stigmas
  • 60 ml warm (70°C) clear artisanal stock set aside in a covered glass
  • 200 g Carnaroli or Vialone Nano risotto rice
  • 40 ml dry white wine, finely minced shallot, 35 g cold cultured butter & aged Parmigiano-Reggiano
HOUSE METHOD
  1. 01Begin by steeping 10 whole saffron threads in 60 ml of 70°C stock in a covered glass while you toast the Carnaroli rice.
  2. 02Cook the risotto ladling plain warm stock gradually for 14 minutes—do not add the saffron at the beginning, which dulls volatile aromatics.
  3. 03Three minutes before completion, pour the luminous 18-minute saffron infusion and intact crimson stigmas into the pan.
  4. 04Remove from heat and beat vigorously with cold butter and aged Parmigiano (mantecatura) until glossy, golden, and flowing all’onda.
CELLAR & SENSORY NOTEAdding the pre-bloomed 70°C infusion in the final 3 minutes keeps high-altitude Kashmiri Safranal vivid on the plate rather than losing it to 18 minutes of simmering.
BETWEEN INFUSIONS · CELLAR CARE

Three rules to guard volatile Safranal for 24 months.

Crocin and Safranal degrade only when exposed to UV light, steam humidity, or direct boiling heat. Return your 48 mm flacon to its jute sleeve and matte-black coffret after every serving.

01 · DRY TWEEZERS ONLY

Zero Steam Above the Kettle

Never tilt the open borosilicate vial directly over rising kettle steam. Draw 4–6 dry stigmas with clean fingers or brass tweezers and reseal the cork immediately.

02 · DARK COFFRET VAULT

Shield from Kitchen Daylight

Clear glass lets you verify whole stigma integrity on arrival; the hand-stitched jute pouch and rigid black coffret block photo-oxidation on your pantry shelf.

03 · NEVER REFRIGERATE

Cool Pantry (15°C–22°C)

Refrigerators introduce condensation whenever the cork is opened. Keep the sealed coffret in a dry cupboard away from the stove.
